Fish seems to be the only animal-based protein source that my IBS-plagued stomach can handle

Nah just eat fish that are at the bottom of the food chain

I’d recommend that you make sure you’re conscious of the mercury content of the fish you’re consuming. Other than that, fish are pretty lean protein and have good vitamin content (b-12 iirc). Make sure you’re taking in enough healthy fats as well.
 
Also the fish should be wild caught and not farmed, it will have more nutrients in it
