Growth plates and sutures are nothing but convenient sites of growth. In reality there is nothing that decisively stops the bone from growing anywhere or anyhow. The alveolar bone for example freely adapts regardless of whether or not the mid-palatal suture is open. The mandible also changes in shape and size when it is subjected to force. Theoretically there is nothing that would stop the body from growing after growth plates have closed. The question is thus not as much what is preventing the body from growing further as what is missing.
