You can't get enough copper without either nuts (cashews are best) or beef liver. Potatoes also are possibly good but it highly depends on mineral content of the soil.

People who should pay extra attention to this are definitely ones eating alot of zinc (carnivores that dont eat liver)
and people eating alot of fruit (fructose creates need for more copper).

Copper deficiency causes problems with glucose metabolism and can even perfectly mimic diabetic neuropathy.

As many of you reading the literature already know, copper is essential for collagen synthesis and melanin, which is essentially hair pigmentation. People eating alot of zinc and low copper get gray hairs prematurely

Have to eat 16 cashews for getting 80 percent of the RDV of copper

Copper to iron ratio is much more important than copper to zinc. Incrasing cytochrome c oxidase through red light aspirin coffee and thyroid can also increase copper delivery to the electron transport chain.

"The importance of reductions in the activity of cytochrome oxidase in causing the manifestations of Cu deficiency has probably been underestimated. Many authors have suggested that the reduction to 50% of normal activity seen in Cu deficiency is unlikely to cause disease (e.g. 85)."

There are other copper antagonists such as zinc, however while zinc is generally documented as such in the nutritional literature, it is not only the weakest of all copper antagonists, but its action on copper takes place only on an intestinal level, so once copper goes into storage, zinc will have no effect on lowering copper any longer. The only time zinc could become a threat to copper is in situations where either copper levels are already on the low side and high amounts of zinc are ingested, or when potassium and calcium - being "synergistic allies" to copper - are well below normal."

Copper also induces vasorelaxation and combats noradrenaline induced vasoconstriction.
