Also agree with your point on it not scaling linearly. I am 192cm / 6'3.6, and my experience is this:

1) It can go weeks between meeting people who are taller than me (in Norway, average height 180.48cm / 5'11 based on https://worldpopulationreview.com/country-rankings/average-height-by-country)

2) Women and even men have absolutely no idea how tall I am, often wildly overestimating it. I would be rich if I got a dollar every time someone asked me if I was 2 meters (6'7). I don't think anyone has ever underestimated my height. I believe the reason for this is that 192cm is a lot more rare than people think it is. People have an impression that every other guy in europe is 190+, but its far from the case. I believe the range of 178-184 is significantly filled out, but 190+ range is still rare.

3) In clubs, women will approach me and say "you are so tall", but they won't ask me about my exact height. They are totally uninterested in numbers. They simply put me in the "tall" category and thats that. But I'll get guys coming up to me asking "how tall are you?" - usually by someone in the slightly above average range in terms of height. Guys seem to be hung up on the numbers, girls not so much.

4) People always talk about how important height is on tinder, but in my experience almost none of my matches would ever even register my height. I usually brought it up in conversation to get some "free points", but their reaction - although positive - wasn't anything special. Then if I met them IRL they would be shocked at how tall I was - likely because on tinder, they work with a simple cutoff. To them, it just isn't important as long as the guy is over X height.

All in all, I think girls in general want men above a certain height. I think the 6ft cutoff is a reasonable representation of what they prefer. The difference between being 6ft and 6ft 4 in terms of attracting girls might matter if all else is literally equal, but that is obviously purely hypothetical. I think that being tall is less about absolute height, and more about how height can make you look more aesthetic in terms of proportions. A lean, athletic 185cm guy with long limbs will look better and taller to a girl than a 190cm guy with more "normal guy" proportions and a more fridge-like physique. Girls literally can't tell the difference in height unless you put the two guys backs up against each other.

Two major caveats to this is height fetishists and general subjectivity.

Height fetishists are those girls who rate tall guy genetics very highly. They will be more hung up on the numbers (although they also have no idea what each height looks like). They would rather have a average looking 195cm guy than a really aesthetic looking 183cm guy. They are quite rare though, but do exist. They make themselves very obvious.

Girls are also much more subjective about this stuff than it might appear on social media etc. As we know, the height requirement is one of the physical traits women are more open to admitting to having. But I think there are way more girls that accept more average height ranges (175-180cm) than people generally think. There is a meme that short girls want even taller guys, but IMO this is the opposite from the truth. Generally speaking, shorter girls are more accepting of shorter guys. The only ones more accepting of shorter guys are super tall girls that have more or less given up on finding men who are taller than them.
