More than double Vitamin C content than the fruit with most Vitamin C (orange) and 212% daily recommended intake in one medium sized red pepper.
Also shitload of vitamin A (which in the source of vegetables converts to retinol) and around 1500μg beta-carotene per pepper.
Also some potassium to balance out sodium intake.
Not to mention tastes amazingly crunchy and sweet.
Just make sure not to cook it as Vitamin C is lost in heat
